Meal Plan Monday #2
HAPPY MONDAY FRIENDS!!!
Below I have some our favorite meals! They are super easy, and kids are into them as well!
Monday: You guys.. this is once a week meal for us, "Luca" pasta! All I do is cook noodles per packaging directions. Add pesto, tomatoes (or basically whatever vegetable you are feeling like), last week we roasted zucchini, asparagus and added boiled peas. Top of with parmesan cheese! DELISHHH! 😋
Tuesday: Taco Tuesday is a staple over here..
We don't follow a recipe for our tacos either. What we usually do is Justin cooks our meat with a homemade taco seasoning that he makes, the meat we typically use is ground turkey.
The kids love a soft shell, as for Justin and I we usually do a crunchy shell, or lay our meat on top of a bed of lettuce, and add cheese, salsa, and guac.
Wednesday: Rice bowls
Cook rice, roast veggies that we have in the fridge (we usually use the veggies that have been in the fridge for a while and this is the perfect way to use them up, and every once in a while we would add black beans that we drain from a can. We top it all off with YUM Sauce, liquid aminos, cheddar cheese, Aardvark Hot Sauce.
Thursday: Veggie Wraps - We are trying a new recipe! Will let you know how it is!
Friday: Sloppy Joe Spuds 🥔 - This one is totally MY favorite.
Saturday: Pizza Night
Guys.. This is us being lazy and just cooking up a pepperoni pizza and cheese pizza from Costco and usually I will add a veggie platter to go with it. But sometimes I feel like we just a need a night to relax and honestly just be lazy.
Sunday: Shrimp Stir-fry
This recipe is super easy too!
Air fry shrimp, roast potatoes with cabbage and cauliflower seasoned with salt, pepper, garlic powder, and chili pepper. When all is cooked just toss together. YUMMYY!
